DELICIOUS WINTER WARMER

Spiced Porridge is a warm winter dish that will warm your insides out and literally give your tummy a hug. Toasting your oats in ghee, and cooking with spices and milk is the most nourishing and digestible way to have porridge.

Ingredients

  • 1 cup quick oats
  • 1 teaspoon ghee
  • 1 cup of water
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon cardamom powder
  • 1/4 teaspoon nutmeg powder
  • Handful of raisins or date
  • 1 cup unhomogenised milk
  • 2 teaspoon raw sugar (optional)
  • Roasted Coconut (garnish-optional)

Instructions

  1. Heat the ghee in a saucepan on medium heat. Add the oats once the ghee is melted and toast for 1-2 minutes until slightly brown. Add the water and keep stirring (this helps break up the lumps). Add the spices and raisins and cook for 2-3 minutes.
  2. Add in milk and cook for 5 minutes, until it becomes a nice thick texture. Add raw sugar and cook for another 30 seconds (Always good to add raw sugar for Vata dominant people or Vata aggravation, and or in the autumn season). Remove from the heat, serve it warm and enjoy. Can add roasted coconut flakes on top or throughout.
