Ingredients

  • 1 cup buckwheat flour
  • 1/2 cup rice flour
  • 1/2 cup of filtered water
  • 1 teaspoon of olive oil
  • 1/4 teaspoon ajwain seeds (optional)
  • 1 teaspoon salt
  • ghee to cook with
  • Flour for dusting (rolling the rotis)

Instructions

  1. Place all the ingredients into a mixing bowl, but leave the water to the side. Mix well to blend ingredients together. Slowly begin to add the water into the bowl and mix together until the flour begins to blend together. Begin to knead the mixture together to create a smooth texture. This may take up to 30-60 seconds. Set aside 5 minutes to sit.
  2. Divide the mix into 6 balls of the same size. On a clean surface prepare for rolling. Add some flour to the surface and place one ball ready to roll. Evenly roll the ball out until it becomes a flat roti and it’s even.
  3. Preheat your skillet or roti pan. Once heated add the roti and cook for 30 seconds. Once the roti begins to puff and get little bubbles through the roti, turn it over. Apply some oil or ghee around the edges of the roti and cook for a further 30-60 seconds.
  4. Repeat the same with the remaining dough balls. Serve roti with dhal, soup or simple enjoy with some ghee and avocado
