beetroot rice

INGREDIENTS                                               

  • 1 cup of medium grain rice

  • 2-3 cups of water

  • 1 small beetroot (grated)

  • coconut oil 

  • 1 tsp salt 

METHOD

  1. Always make sure to wash your rice to remove impurities. Washing the rice until water is clear, add approx 2-3 cups of water and bring to boil in a medium-size saucepan (You can add in more water if you prefer this method, rather than cooking rice the absorption way)

  2. Once boiled, turn down to medium heat and scrape off any white foam substance that comes to the surface (this is the toxins from the rice)

  3. Should take about 10 minutes depending on your rice. I like to take my rice out still a little chewy as it continues to cook when strained)

  4. Once the rice is strained, keep aside and heat a little oil on medium heat in the same saucepan. Add the grated beetroot and salt and cook for 1-2 minutes stirring constantly to make sure it doesn't stick. 

  5. Add the cooked rice and stir well

  6. Serve with dhal and garnish with fresh coriander
