Ingredients

  • 1 cup water
  • 1/2 tsp fennel seeds
  • 1-inch fresh ginger
  • 4 cardamom pods
  • 1.5 cups milk
  • 1 tbsp black tea leaves or 2 tea bags
  • Sugar to taste

Instructions

  1. Add water, ginger, cardamom (pounded), and fennel seeds to a small pan & bring to a boil.
  2. Once boiling, add tea leaves/tea bag and milk at the same time and bring back to boil. (IMPORTANT - The tea and the milk get poured in at the same time so the milk coats the tea and releases the tannins of the tea)
  3. NOTE: Make sure to properly boil the milk, to do this allow the milk to rise once, set aside for a few seconds for it to settle down, and then do this x 2 more times. Milk is then purified and ready to drink.
  4. Strain, add sugar, and enjoy hot. (Avoid having milk with anything salty)
